Lavender Champagne Cocktail

Mark: I first had this drink at Sel de la Terre, an excellent French restaurant with an innovative menu, in Boston. Sadly, Sel de la Terre is gone.

Karen: Lillet is popular in the US right now... I remember when it was "the aperitif of choice" for French ladies "of a certain age"!

Serves 12

Ingredients

1 bottle red Lillet (French aperitif)
¼ cup dried lavender
2 bottles Champagne

Instructions

  1. Pour Lillet out into a re-sealable glass container or bowl. Save the Lillet bottle & cork, you'll use it later.
  2. Cut an 8” square of cheesecloth, and put the lavender in the center.  Pull the edges up to form a sack and tie shut with cotton twine.
  3. Submerge the lavender sack in the wine.  Cover and let sit for at least three days.
  4. Squeeze the sack dry, and discard.
  5. Rebottle the infused Lillet.
  6. To serve, pour a splash of the infused Lillet in a champagne flute and fill with chilled champagne.
