Cucumber Sambal

Okay, this is actually an Indonesian dish, not Caribbean. But with the combination of cool cucumber and a little hot chili, it works perfectly in a Caribbean meal.

Americans consume more than 5 billion pounds of deli meats a year, including about 800 million pounds of bologna.
